Our cocktail and beer list is influenced by our overall culinary mission: to try to understand and define the cuisine of the northeast, especially the Hudson Valley and Catskills. We make drinks with ingredients we grow ourselves on our farm in the Catskills, and we try to plant herbs and fruit as the bar requests them.
Ours is a restaurant bar, primarily focused on serving dining customers, so our focus is also on finding drinks that harmonize well with food and display a level of sophistication and polish appropriate to thoughtful, food-focused customers. We don't make a lot of margaritas or pour many rounds of shots.
The bartender also serves food to customers at our small bar and will often run drinks out to customers in the dining room when necessary: in short, you should be willing to pitch in in any way necessary to help keep service running smoothly.
This is a good job for someone who's interested in a supportive and collaborative environment in which to develop a deeper knowledge of food, wine, beer, and cocktails and the ways they can improve one another.
