Responsible for the daily operations of the kitchen, providing professional leadership and direction to kitchen personnel.
Ensures that all recipes, food preparations, and presentations exceed expectations.
Maintains a safe, orderly and sanitized kitchen.
Demonstrates by example, using proper food-handling techniques.
Daily duties:
*Prepares and oversees daily production list
*Manages all recipes and portion control
*Maintains sanitary kitchen, dish, and storage areas meeting health department standards
*Places all food and supply orders meeting specific par levels
*Receives and verifies product against order sheets ensuring freshness of product
*Hires and trains employees to company standards
*Manages staffing levels throughout shift in regards to breaks and overtime
*Oversees kitchen labor and food cost to budgetary requirements
Requirements:
- Two years prior experience running your own kitchen
- Butchery/fabrication skills
- Good work habits
- Cleanliness a must
- Organizational tightness
- Problem solving resolution skills
Must be ready to prepare a tasting
